Hibiki is made from a unique blend of malt and grain whiskeys and uses different cask types for aging. The final whisky has no age statement (NAS). The blend combines younger whiskies with older barrels aged 12 to 15 years.

 

 If there were one word to describe the aromas, it would be floral. Its bouquet is wondrously aromatic, with rosemary, sage, chrysanthemum, and sandalwood. There is also light raw coconut, apricot, and a touch of salinity.

Taste-wise, it starts with honey, almond, coconut, rose, and lychee, which morphs into deeper wood, white chocolate, cigar, and leather the longer it sits on your tongue. A nice long finish. Recommended to drink neat.

Vermentino is a light-bodied white wine that grows mainly in Italy on the island of Sardinia. What’s exciting about Vermentino is that it can be deliciously complex in taste, similar in style to Sauvignon Blanc.

 

 This is an excellent example with notes of stone fruit, gentle citrus, and a hint of mint. Refreshing and bright. Delicious with shellfish (think mussels in a light broth), chicken, and an excellent all-around sipper.

2012 Malescot-St-Exupery, Margaux, France

Chateau Malescot-St. Exupery’s Margeaux is a blending of 66% Cabernet Sauvignon, 29% Merlot, 8% Petit Verdot, and 7% Cabernet Franc. This medium-bodied wine was aged in 90% new French oak barrels for close to 15 months. Flowers, smoke, tobacco, black cherry, and black raspberry notes open to medium/full-bodied, supple-textured wine filled with chocolate-covered cherries and spice.

 

2012 is noted as an excellent vintage in Margeaux, and this wine is in its prime drinking window though it could certainly be kept for another five-eight years. We recommend decanting for two hours, give or take.

Chateau Malescot-St. Exupery is best served at 60 degrees Fahrenheit. The cool, almost cellar temperature gives the wine more freshness and lift. Serve this with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised, and grilled dishes.

A well-balanced, medium-bodied Barolo with a core of ripe berries and hints of spice and citrus peel. The tannins are lightly firm; this is just hitting its drinking window now.

 

Floral fragrances combined with notes of wild berries, cloves, tobacco, black pepper, and balsamic. Power on the palate with a solid acidic backbone and savory flashes, it has well-integrated smooth tannins and a pleasant spicy finish.

The winery is in the Annunziata district of La Morra, where the soils are richer in the sand, producing more fragrant and elegant wines. In this case, the wine ages 24 months in barriques, 20% of which are new, and two in bottles. It comes across as a super harmonious, round wine with sweet, velvety tannins but the great freshness and intense aromas of ripe fruit—a delightful discovery.
