Penelope is still an upstart in the bourbon world — the original guys behind Penelope started in 2017, making its whiskies through three specific MGP mash bills.

 

While many distillers are suddenly chasing double oaked, Penelope is focusing on wine cask finishes and even ‘bespoke’ whiskey with its Architect series. Penelope bourbons are blended from three different MGP mash bills, each aged 4-5 years in new American oak barrels. Uncut and non-chill filtered.

Penelope Toasted used its signature four-grain straight bourbon whiskey as the starting point here. After full maturation in charred new American oak barrels, it is finished in a new, freshly toasted barrel. Each batch is a unique blend of whiskies with different customer chars and toasts – making each batch unique. Penelope/MGP says that the barrels selected for this series are the best in their inventory and go through an intensive selection process.

 

The whiskey has prominent flavors throughout, with cherries and rye spice taking center stage, showing its intensively charred level #5 barrels burnt oak and its alcohol level.

Sweet candy and floral aroma with some early oak notes. Rich leather and good heat with floral and botanical lingering notes on the finish.

The 2016 Gloria is one of the undisputed stars of this vintage. Rich, deep, and explosive, 2016 possesses tremendous intensity in all its dimensions. Sweet red cherry, tobacco, and dried rose petals all add complexity.

​

Grapes for this wine come from over 50 hectares, with an average vine age of 40 years, spread across three areas of the appellation. It is a blend of 65% Cabernet Sauvignon, 25% Merlot, 5% Cabernet Franc and 5% Petit Verdot.

 

Expect classic Bordeaux flavors of currant, blackberry, cherry, bell pepper, olive, asparagus, spice, ginger, oak, vanilla, black cherry, plum, smoke, toast, tar, tobacco, raspberry, cassis, cedar, molasses, and dark fruit.
